Antelope Meat Recipes

Antelope is another of the popular and favorite meats that become a spread for those meat eaters who love to taste different meats and different recipes.

Antelope meat needs proper preparation and cooking to make it a worthwhile effort. Antelope is a meat that is low in fat and will need frequent brushing with oil when cooking. When grilling the antelope you will need to keep brushing it with a coating of oil to prevent it from drying out. This will prevent the meat from sticking to the pan or from drying out and will retain a succulent crust on the top. 

Antelope is meant to be cooked to a medium rare for it to remain tender and moist. The pieces best suited to this kind of cooking are the loins, fillets, or chops. An internal temperature of 130 degrees leaves the antelope deliciously moist and juicy. When roasting antelope it should be at low temperatures, like 180 degrees to 200 degrees F for longer hours. It should be tender when pricked with a fork.    

Here is a recipe that you will surely relish in preparing your antelope dish.

Grilled Antelope Steak

7½ hours | 7 hours prep | SERVES 3 -4 (Change Servings)

Ingredients you will need to prepare grilled antelope steak-

Antelope steak 3 lbs, cut into thick slices of 1 1/2 inches

Onions chopped 1/4 cup

Garlic crushed 2 cloves

Juice of fresh lemon 3/4 cup

Vegetable oil 1/4 cup

Vegetable oil 1/4 teaspoon

Salt 1/4 teaspoon

Onion salt 1/4 teaspoon

Thyme 1/4 teaspoon (optional)

Celery seeds 1/4 teaspoon

Oregano 1/4 teaspoon (optional) 

Rosemary 1/4 teaspoon

How to prepare –

Combine all ingredients except the meat and place in large shallow bowl or fill into a plastic bag

Now add the meat to be marinated for about 6 to 8 hours

Prepare the barbeque to cook the meat

Place the steak on a rack, about 6 inches above the hot coals

Grill the steak about 10 to15 minutes while basting from time to time

Turn and continue to baste and grill for 10-15 minutes longer for medium steak

This will make about 7 to 8 servings. All meat dishes should be accompanied by plenty of greens and fresh vegetables to further bring out the taste of the steak meat.

Here is another recipe for you to experiment with. You may, however, use other meats to replace the antelope, if you like.

Pie of Antelope Steak

You will first need to prepare a crust for the pie.

Ingredients that you will need are:

Flour 1 cup

Mashed Potatoes 1/2 cup

Shortening 1/2 cup

Baking powder 1 teaspoon

Salt 1/4 teaspoon

 Water 1 cup

For the Filling:

Antelope steak 1 1/2 lb

Cloves ground 1/8 teaspoon

Flour 2 tablespoons

Pepper 1/3 teaspoon

Salt 1 teaspoon

Water

Preparation

Sift flour, baking powder and salt together; add shortening and cut it or rub it

Add mashed potato to form dough, using the water

Place the dough in the refrigerator to chill, while you prepare the antelope meat

The steak should be cut into narrow strips. Then dip each strip into the seasoned flour

Put a tiny blob of fat into the center of every strip of meat. Roll each strip and place them into a casserole or deep baking dish

Fill half a dish with water and cover closely to bake the meat for one hour in slow oven. Later remove cover

Roll the crust out flat and place it over the meat

Return the baking dish to the oven to bake for another twenty-five minutes

To lend variety in flavor add few small pieces of mushrooms, oysters or kidney to be cooked with the antelope steak.

Eat freshly when prepared. You may use some sauces to go with it if you like.
